Frosty Pumpkin Pie
2 cups vanilla yogurt or ice cream (softened) 9 inch graham cracker crust 1/2 cup sugar 1 cup pumpkin 1 teaspoon pumpkin pie spice 1/2 teaspoon salt 1/2 teaspoon ginger 8 oz. cool whip (thawed)
Directions: Spread softened ice cream in the bottom of the crust. Mix pumpkin, sugar, spices and fold in cool whip. Freeze until firm.
NOTE: Other 'light' colored ice creams work well in this pie too. Just make sure that they compliment the pumpkin flavor.
