In the June 1 newsletter Mariann in Michigan (cool name by the way) asked for a hot buttered rum recipe you could store in the fridge. I have two but they are stored in the freezer and you just spoon out what you need and they keep forever.
Hot Buttered Rum Mix #1
1 lb. butter, softened 1 lb. powdered sugar 1 lb. brown sugar 1 qt. vanilla ice cream, softened 1 to 2 tsp. cinnamon 1 to 2 tsp. nutmeg
Mix all ingredients together. Store in freezer. Put two to three teaspoons in mug with rum or brandy and boiling water. Enjoy!
Hot Buttered Rum Mix #2
1 lb. butter, softened 1 lb. light brown sugar 1 qt. real vanilla ice cream, softened
Cream butter and sugar until fluffy. Add ice cream and blend until creamy. Refreeze or serve immediately. Will keep well for a while in the refrigerator.
