Hi all,
I love your newsletter. My mother has asked me to ask you and your readers if someone has a recipe for a pie that has chopped pecans, raisins, and coconut in it. She said it taste sort of like pecan pie, except the pecans are chopped instead of on top. Thanks in advance for all your help.

Hi Rhonda, This first recipe for Dixie Pie calls for walnuts. I am sure you can use pecans instead. Rhonda I believe this is the recipe you are looking for. This recipe doesn't have a name. I got it from my mother-in-law over 40 years ago as it was my husbands favorite pie. I always thought that she had just make it up. My Husbands Farorite Pie 1 1/2 cups raisins 1/4 cup lemon juice 2 T. flour 1 cup sugar 1 cup boiling water 1 T. butter Few grains of salt About 1 cup chopped pecans About 1 cup coconut Combine sugar, flour, and salt. Add boiling water slowly, stirring constantly. Cook over hot water until thick and clear. Add raisins, lemon juice, and butter. Mix thorourly. To this add the pecans and coconut. I never measure this but I put enough so that the mixture is no longer runny. Also add cinnamon,allspice or applepie spice to what ever accomodates your taste. I put this in a prepared pastry lined pie pan. You can strip the top or use a whole top crust. Sprinkle the top with sugar and bake in a hot oven about 400 or 425 degrees for about 25 minutes. NOTE: If you are very careful you don't have to cook the first mixture over hot water. You can use a very low fire and stir constantly.
