This is for Debbie who was looking for a pineapple cream pie recipe.
Pineapple Cream Pie
Scald 2 cups milk. Mix together 1 cup sugar, 3 Tablespoons cornstarch,3 egg yolks, (saving whites for meringue)and a little of the milk before you scald it.
Add sugar mixture to scalded milk and cook til thick.
Add 1 tsp. vanilla and 1 small can well drained crushed pineapple.
Let cool and add to baked 9" pie shell. Top with meringue. Bake til golden and eat!
I use this cream filling for all my cream pies.
Good luck! I tried to send this yesterday, but our brilliant techs at our cable office decided it was time to play with the modems and kicked everyone off for 4 hours.
