FROZEN CHOCOLATE MOUSSE PIE Frusen chokladmoussepaj
Serves 10 - 12
Dough: 1 package vanilla wafers, approx 6 oz 1/3 cup melted butter or margarine
Filling 1: 3 1/2 oz butter or margarine 1 1/4 cups sugar 2 eggs grated zest and juice from 1 orange
Filling 2: scant 1/4 cup sugar 2 - 3 tbs cocoa 1 1/4 cups heavy cream good 1/3 cup coarsely chopped walnuts 1 ripe mashed banana
Crumble the wafers and mix with melted fat to a crumbly dough. Press out in the bottom of a baking dish with removable bottom, diameter approx 9", using the back of a spoon. Put the dish in a cold place.
Stir fat and sugar for filling 1 until really fluffy. Add the eggs, one by one, and stir until smooth. Flavor with orange zest and juice, then pour this onto the dough bottom and even it out.
Mix sugar, cocoa and scant 1/4 cup cream for filling 2 to a creme. Beat remaining cream until thick and stir in the cocoa creme. Mix with chopped nuts, mashed banana and maybe some coarsely chopped red or green thingytail cherries, Maraschino type.
Pour the cream mixture on top of the orange mixture and sprinkle with remaining wafer crumbs. Cover the pan and freeze for 12 - 14 hours. Take it out to room temperature about 30 minutes before serving and decorate with some fresh fruit, if you wish. Enjoy!
