Makes 1 pie = 6 - 8 pieces
This pie is really delicious with an interesting blend of tastes between tart and sweet.
Dough: 1 1/4 cups flour 1 tbs sugar 5 oz butter or margarine 1 egg
Filling: approx 1 lb 3 1/2 oz plums good 1/3 cup sugar 1/2 - 1 tbs cinnamon
For serving: whipped cream, flavored with vanilla
Dice the fat. Put flour, sugar, fat and egg (in this order) in a food processor using the steel knife. Process to a smooth dough and leave to rest in the fridge for at least 1 hour.
Heat the oven to 435F. Roll out the dough and dress a pie pan, diameter approx 10", with it. Put the pan in a cold place while you split and pit the plums. Combine sugar and cinnamon and sprinkle half of it onto the pie crust.
Put the plum halves tightly together, skinside down, on the crust. Sprinkle with remaining cinnamon sugar and put in the oven for 15 minutes. Lower the heat to 400F and bake for another 15 - 20 minutes.
Serve lukewarm with cold, whipped vanilla cream.
This pie is suitable for freezing. Enjoy!
