On a cold winter's day, there is nothing quite as good as this pudding served with vanilla ice cream.
1½ cups brown sugar 2 Tbsp. butter 2 cups raisins 3½ cups boiling water 2 Tbsp. butter 1 cup sugar 1 tsp. vanilla 4 tsps. baking powder 2 cups flour ¼ tsp. salt 1 cup milk juice and rind of 1 orange
Boil first 4 ingredients uncovered until raisins are soft and plump ~ about 10 minutes. Cream together butter, sugar and vanilla, add dry ingredients mixed together alternately with milk, and pour into large baking dish. Add orange juice and rind to raisin mixture and pour over batter. Batter will be thick and raisin mixture very thin, do not stir. Bake at 350 degrees F for 30 minutes. The batter will rise to the top of the baking dish and the raisins will be on the bottom in the sauce.
