Crust:
1 c graham cracker crumbs
1/4 c granulated sugar
2 oz unsweetened chocolate, melted and cooled
1 1/2 t vanilla
1/3 c butter, at room temperature
Filling:
1 c semi-sweet chocolate chips
1 can sweetened condensed milk (14 oz)
1/2 t salt
1 can cherry pie filling (21 oz)
1 t almond extract
sweetened whipped cream for topping
Preheat the oven to 375 degrees F. To prepare the crust, put the
cracker crumbs, sugar, chocolate, and vanilla in a mixing bowl
and stir to combine. Add the butter and cut it in with a pastry
blender or fork until it resembles coarse meal. press the
mixture into an 8-inch or 9-inch pie pan. Bake for 8 minutes.
Remove from the oven and cool on a wire rack. To prepare the
filling, put the chocolate chips, sweetened condensed milk, and
salt in a medium sauce pan. Bring the mixture to a boil over
medium heat, stirring continuously, until the chocolate has
melted and the mixture is blended. Remove the sauce pan from the
heat, add the cherry pie filling and almond extract, and stir to
blend. Pour the filling into the prepared pie shell and chill
for at least 2 hours. Serve garnished with the whipped cream if
desired.
