1 prepared cookie pie crust, home made or store bought 3 egg whites, beaten stiff 1/2 teaspoon baking powder 1 cup sugar 1 teaspoon vanilla extract 1 dozen graham crackers, rolled fine 1/2 cup shredded coconut 1 cup nuts,chopped whipped cream for topping
Beat egg whites until frothy, sprinkle baking powder over whites and continue beating until stiff. Gradually beat in sugar, add vanilla. Mix together graham cracker crumbs, coconut and nuts. Fold into egg white mxture. Spread into prepared and baked pie crust. Bake at 300* for 30 minutes or until set and very lightly browned. Cool and serve with whipped cream
