1 1/2 c. milk 2 tbsp. minute tapioca 1 egg, separated 3 tbsp. sugar 1/8 tsp. salt 1 tsp. vanilla 2 sq. unsweetened chocolate
Scald 1 c. milk in top of double boiler. Add tapioca, cook 20 mins. or until tapioca is transparent. Stir frequently. Beat egg yolk. Add sugar & salt. Put tapioca mixture w/egg yolks. Put over bottom of double boiler, cook until thickened. Remove from heat, fold in stiffly beaten egg white, vanilla & chocolate blended w/half c. scalded milk. 4 servings.
