Impossible Cherry or Peach Custard Pie
1 c. milk 2 Tbs. margarine or butter, softened 1/4 tsp. almond extract 2 eggs 1/2 c. Bisquick Original baking mix 1/4 c. sugar 1 can (21 oz.) cherry or peach pie filling
Streusel (see below)
Heat oven to 400 degrees, and lightly grease a glass or ceramic pie plate with butter crisco, 10 x 1-1/2 inches. Make sure to take the grease all the way up the sides to the top. Stir all of the ingredients except the pie filling and streusel with fork until blended. Pour into pie plate and spoon the pie filling evenly over top and out carefully to the sides. Bake for 25 minutes and then gently sprinkle the streusel over pie filling. Use a butter knife to tap the streusel out to the edges. Bake about 10 minutes longer until streusel is very lightly brown; and the cool before cutting. Refrigerate any remaining pie.
Streusel:
1/2 cup Bisquick baking mix 1.2 cup packed brown sugar 1/2 tsp. ground cinnamon 1 tbsp. firm margarine or butter
Using a pastry cutter, mix all of the ingredients until well blended and crumbly.
