Kathy requested a ground beef meat roll in our most recent newsletter. I looked up in my cookbooks and found these. Hope one is what she is looking for! Chris
Hamburger Pancake Roll-ups from the 1964 Bisquick cookbook
Make pancakes from Bisquick's basic recipe, except add 1/3 c. more milk. Bake each pancake about 6 inches in diameter. Spoon 2 Tbl. crumbled hamburger mixture (below) on each pancake. Roll and place folded side down in oblong baking dish, 13 x 9 1/2 x 2". Cover with 1/2 to 1 c. grated sharp cheese. Heat thoroughly in 350 degree ocen about 10 minutes.
Crumbled Hamburger
Brown 1 lb. ground beef, 2 tbl. instant minced onion in 2 tbl. fat. Add 2 tbl. Bisquick, 1/3 c. catsup, 1 tbl. prepared mustard, 1/2 tsp salt, 1/4 tsp. pepper and 1 c. sour cream. Simmer 5 to 10 minutes.

Hidden Taco Sandwich Loaf from the 1989 Bisquick cookbooklet from Chris
1 lb. ground beef 1 pkg. taco seasoning mix 3 c. Bisquick 2/3 c. milk 2 tbl. butter or margarine, softened 2 eggs salsa sour cream shredded cheddar cheese
Heat oven to 375 degrees. Prepare ground beef and taco seasoning mix as directed on pkg. Grease loaf pan generously. Mix baking mix, milk, butter and eggs. Spread 1/2 of batter in bottom and about 1 inch up sides of pan. Spoon ground beef mixture evenly onto center of batter. Drop remaining batter by teaspoonfuls onto ground beef mixture and spread batter carefully with spatula. Bake until light brown and firm, about 25 to 30 minutes. Cut into slices and serve with salsa, sour cream and cheese.

Pizza Calzones from the 2000 Bisquick cookbooklet from Chris
1 lb. ground beef 3/4 c. pizza sauce 5 c. Bisquick 3/4 c. water 3 tbl. veg. oil 1 1/2 c. shredded cheddar cheese grated parmesan cheese with garlic and herbs
Heat oven to 450 degrees. Cook beef in 110 inch skillet over med. heat, stirring occasionally, until brown. Drain and stir in pizza sauce. Stir Bisquick, water and oil until dough forms. Dough will be dry. Turn dough onto surface generously dusted with Bisquick. Gently roll in Bisquick to coat. Shape into ball and knead 5 times. Divide dough in 11/2. Roll or pat each half into 12 inch circle. Place each dough circle on ungreased cookie sheet. Top half of each circle with cheddar cheese. Top cheese with beef mixture. Fold other 1/2 of each circle over filling. Press edges together with fork to seal. Sprinkle with parmesan cheese. Bake 15 to 20 minutes or until golden brown. Immediately remove from cookie sheets to wire rack. Cool 5 minutes. Cut each calzine into 5 wedges. Serves 10.
High altitude - 3500 to 6500 ft. Heat oven to 475 degrees. Increase water to 1 c. Let dough rest 3 to 5 minutes after kneading. Bake 15 to 18 minutes.
