1 tbsp. veg. oil 6 pork chops(boneless loin chops) 1/2 inch thick (about 1 1/2 lbs) 1 large onion, chopped (1 cup) 1/4 cup Bisquick Orginal baking mix 1 cup chicken broth 1 cup apple cider 1 tsp. salt 1/4 tsp. pepper 1 tsp. dried thyme leaves 1 pound yams ,peeled and cut into 1 inch pieces(3cups) 2 1/4 cups Bisquick baking mix 2/3 cup milk
Heat oven to 350 degree. heat oil in 10 inch skillet over medium -high heat. Cook pork in oil 5 minutes turning once , until brown; remove from skillet. Cook onion in skillet about 5 minuts, stirring frequently , until crisp-tender. Sprinkle 1/4 cup baking mix over onions, stir until blended. Stir in broth, cider,salt,pepper and 1/2 tsp. of the thyme. Heat to boiling , stirring frequently. remove from heat. Place pork in ungreased rectangular pan, 13x9x2 .Top with onion mixture and yams. Cover and bake 45 minutes. Mix 2 1/4 cups baking mix and the milk until soft dough forms; beat 20 strokes. Turn dough onto surface generously dusted with baking mix; gently roll in baking mix to coat . Shape into ball; knead 10 tomes. Roll 1/2 inch thick. Cut with 2 -inch cutter dipped in baking mix. makes 6 servings.
