Pat's Chocolate Crinkles
3 eggs
1 1/2 c sugar
1/2 c vegetable oil
2 tsp vanilla
4 oz unsweetened baking chocolate, melted and cooled
2 c flour
2 tsp baking powder
Confectioner's Sugar
Beat together eggs, sugar, oil and vanilla.
Stir in chocolate. Add flour and baking powder.
Chill dough, covered, for two hours.
Roll dough into balls, about 1" diameter.
Roll each cookie in powdered sugar before placing 2" apart on increased baking sheets.
Bake 10 minutes at 375*F.
Makes about 48 cookies
