Chocolate Mayonnaise Cake 18 oz package chocolate cake mix (I use Duncan Hines fudge) 1 cup mayonnaise (Hellmann's or Best Foods, depending on where you live) 1 cup water 3 eggs
Preheat oven to 350°F. Spray two 9-inch round cake pans with cooking spray; coat with flour. In large mixer bowl combine cake mix, mayonnaise, water and eggs. With mixer at low speed, beat 30 seconds or until combined. Beat at medium-low speed 2 minutes. Pour into prepared pans. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool in pans on wire racks 10 minutes. Remove; cool completely. Sprinkle with confectioners sugar or fill and frost as desired. Makes 2 (9 inch) layers or 12 servings.
BUNDT CAKE Preheat oven to 350°F. Spray 10-inch fluted tube pan with cooking spray; sprinkle with flour. Prepare batter as directed; pour into prepared pan. Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack 25 minutes. Invert from pan and cool completely. Frost as desired. Servings: 12
