Chocolate Mayonnaise Cake
18 oz package chocolate cake mix (I use Duncan Hines fudge) 1 cup mayonnaise (Hellmann's or Best Foods, depending on where you live) 1 cup water 3 eggs
Preheat oven to 350°F. Spray two 9-inch round cake pans with cooking spray; coat with flour. In large mixer bowl combine cake mix, mayonnaise, water and eggs. With mixer at low speed, beat 30 seconds or until combined. Beat at medium-low speed 2 minutes. Pour into prepared pans. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool in pans on wire racks 10 minutes. Remove; cool completely. Sprinkle with confectioners sugar or fill and frost as desired. Makes 2 (9 inch) layers or 12 servings.
