2 cups pea beans 1/4 lb bacon, diced 1 cup orange juice 1/2 cup ketchup 2 Tbsp molasses 2 Tbsp sherry or vinegar 2 tsp salt 1/2 tsp dry mustard 1/4 tsp ginger
Soak beans overnight. Drain, reserve soaking liquid. Heat cooker brown bacon. Pour off excess fat. Add beans and remaining ingredients. Mix well. Add enough of the soaking liquids to well cover the beans. Close cover securely. Place regulator on vent. Cook for 45 min with regulator rocking slowly. Let pressure drop of its own accord.
