Hi! Has anyone else eaten at a Zio's Italian Restaurant? Does anyone have any clone recipes from them or know of a site that does? We ate there for my Dad's 80th birthday in Aurora, CO recently and were amazed by the wonderful food and service!!!! It is outstanding! Help!!!!! Thanks a bunch!!!!

I found this one:
Zio's Chicken Pomodora
1 oz. olive oil 8-10 red pepper flakes 1 t. minced garlic 4-oz. Italian marinated chicken (precooked) 1 T. fresh basil 2-oz. fresh diced roma tomatoes 1-oz. white wine 9-oz. precooked linguine 1/4 c. grated Parmesan cheese
Sauté first five ingredients until hot.
Add tomatoes and deglaze pan with white wine. Add linguine and Parmesan. Toss all ingredients and serve in a large bowl.

Zio's Southwest Chicken Fettuccini 6 ounces fettuccini, cooked al dente and drained Alfredo sauce 1 ounce Gold tequila 1 ounce soy sauce 1 teaspoon fresh cilantro 1-1/2 ounces blanched bell pepper (I like red pepper) 1-1/2 ounces blanched red onion 2-1/2 ounces lightly poached chicken breast, cut in bite-size pieces fresh grated Parmesan. Cook and drain pasta. Boil Alfredo sauce until reduced by half. Add tequila, soy sauce, and cilantro Bring to boil and reduce slightly. Add bell pepper, red onion, and poached chicken breast, cut in bite-size pieces Bring to boil again, then combine with cooked pasta. Serve with fresh grated Parmesan. On Copycat recipes Cdkitcen Jay

Here's another I found at 2worksforyou.com:
CHICKEN SCALOPPINI KEVIN FREIFELD Zio's Restaurant
2 oz. Butter 2 oz. Mushrooms 2 ea. Chicken Scaloppini Breast 3 oz. Cream 3 oz. Chicken Stock 1 1/2 oz. Diced Tomatoes 1 oz. Curly Spinach 5 oz. Spaghetti
1) Place mushrooms and chicken in preheated sauté pan. Sauté until mushrooms begin to soften (approximately 2 minutes).
2) Add cream and chicken stock. Reduce sauce for an additional 2 minutes. NOTE: Sauce must have a creamy yellow color and be slightly thicker than heavy cream.
3) Add tomatoes and butter. Dredge spinach in sauce.
4) Place heated pasta on upper center of round plate.
5) Remove the spinach with tongs and arrange along bottom edge of plate (4 o'clock to 8 o'clock.)
6) Remove chicken and arrange in a "V" shape (point of "V" at 6 o'clock).
7) Pour sauce over chicken and lower half of pasta.<
