I have found several recipes for cookies made with Bisquick and Jello Brand Pudding. None of the recipes was credited as being from Weight Watchers. I hope these recipes are what you had in mind.
Chocolate Cookies
Serving Size : 24
1 package Jello Instant Chocolate Pudding -- (4 oz)
1 cup Bisquick mix
1/4 cup soy oil or corn oil
1 egg
Peanut butter chips or M&M candy toppings
Preheat oven to 350 degrees.
Combine pudding mix and baking mix in bowl.
Mix together with wooden spoon.
Add corn or soy oil and egg.
Mix together until a ball forms.
Shape a spoonful of dough into a 1/2-inch ball.
Place on ungreased cookie sheet. Place dough balls about 2 inches apart.
Press your thumb into the middle of each ball to make a thumbprint. Place a piece of candy in the middle.
Bake for 5 to 8 minutes.
Remove cookies from cookie sheet with spatula and place on a piece of paper towel.
(Makes about 3 dozen cookies)

1 1/2 c. Bisquick
2 sm. pkgs. instant pudding mix (pistachio)
1/2 c. cooking oil
2 eggs
Combine ingredients and mix until dough forms a ball. Shape into balls and roll each one in sugar. Place on ungreased baking sheet and flatten slightly with a fork.
Bake at 350 degrees for 8 minutes

3/4 c. Bisquick
1 pkg. instant pudding
1/4 c. cooking oil
1 egg
Put in bowl and beat well.
Roll in small balls.
Flatten on cookie sheet; add nuts.
Bake 8 minutes at 350 degrees F.

If you use lemon pudding, add 1 teaspoon lemon juice.
Roll into small balls, flatten a little with glass dipped in powdered sugar, or just press down with fingers. Bake on ungreased pan 8-10 minutes at 350 degrees F.

BISQUICK COOKIES
2 c. Bisquick
2 sm. pkgs. instant chocolate pudding
1/3 c. oil
1/2 c. milk
1/2 c. sugar
2 eggs
Mix ingredients together. Add 1/2 to 1 cup chocolate chips and nuts. Drop by spoonfuls on cookie sheets. Bake 10 minutes at 350 degrees. VARIATIONS: Use vanilla, coconut or lemon pudding.
