Caribbean Yam Bake
3 cups cooked, mashed yams (2 lbs) 2 eggs 1/2 cup brown sugar, packed 1/4 cup margarine, melted 2 T dark rum (optional) 1/2 tsp. ground nutmeg Zest and juice from 1 lime 2 bananas, peeled, diced
In large bowl, combine yams with eggs, brown sugar, margarine, rum, nutmeg, lime juice and zest until thoroughly mixed.
Fold in diced bananas.
Turn into shallow, greased 5-cup baking dish.
Bake in a 375-degree oven for 40 minutes.
Makes 6 servings.
