Red, white and blue potato salad 5 cups red, white and purple fingerling potatoes 1 cup red peppers (brunoise) 3/4 cup chopped bacon 1 cup chopped green onions 1 cup mayonnaise 1/2 ea juice of fresh lemon to taste salt and pepper
1. Place potatoes in large stockpot and cover with 1 gallon of salted water. Bring to a simmer and let cook until potatoes are tender 10-15 minutes. Set aside on flat sheet pan in refrigerator.
2. Pull the potatoes out of refrigerator and slice about a quarter inch thick.
3. Add potatoes, red peppers, green onions, bacon, mayonnaise, and lemon juice into mixing bowl and gently stir.
4. Season with salt and pepper. Refrigerate until ready to serve.
