4 pounds sweet potatoes 5 tablespoons butter 1/3 cup corn syrup 1/2 cup real maple syrup Grated zest of 1 orange Juice of 1 orange 1 Pinch salt
Bake potatoes until tender, but not soft, about 50 minutes. Cool and peel. Cut in halves lengthwise, then cut in halves crosswise if potatoes are large. If small, leave whole or cut in half. Arrange potatoes in a shallow baking pan large enough to accommodate potatoes in a single layer. If necessary, potatoes can overlap slightly. Melt butter in a small saucepan. Add all remaining ingredients except potatoes. Bring to a boil and boil 3 minutes. Pour over potatoes and bake at 350 F. about 30 to 40 minutes, basting often, until potatoes are glazed.
Serves 8 to 10.
