Crockpot - Ham & Parmesan Potatoes for the gravy: 1 tbsp. butter or pan drippings 3/4 c. flour 1/2 tsp. salt 1/4 tsp. ground black pepper 2 c. milk (Or use 1(2.75oz.) packet country gravy mix, following directions on packet)
4 to 6 medium potatoes, cut in 1/2-inch cubes (about 6 cups) 1 large onion, coarsely chopped 1 lb. ham, diced 1/2 teaspoon dried parsley flakes 1/2 teaspoon celery seed 3/4 cup fresh Parmesan cheese, shredded
for the gravy: Stir flour, salt and pepper together. Set aside. Whisk the flour mixture into a pot with the pan drippings.Whisk the milk in. Cook over a medium/high heat, whisking constantly, for 10 - 12 minutes, until thickened. Should be about 2 cups. for the crockpot: Layer potatoes, onions, and ham in crockpot/slow cooker. Sprinkle with parsley, celery seed and cheese. Pour gravy over top. Cover. Cook on low for 7 to 9 hours, or on high for 4 to 5 hours. Serves 4.
