White Fruit Cake 4 egg yolks (reserve egg whites) 1 cup sugar 3/4 tsp vanilla 4 Tbsp brandy Beat egg yolks, add sugar gradually, then other ingredients. 1 cup flour 1 tsp baking powder 1/4 tsp salt Sift three times and add to the above mixture. 3 slices of pineapple, cut into bite size pieces 1 cup candied cherries 1 lb pitted dates, cut into bite size pieces 1/2 lb walnuts, whole 1/2 lb brazil nuts, chopped Add fruit and nuts to above mixture and fold in beaten egg whites. Bake at 325 for 1 hour and 20 minutes.
