The uncooked dressing balls can be frozen. To serve, bake the unthawed balls at 375 degrees for 45 minutes.
3 to 4 medium-size white potatoes, peeled and cut into 1-inch cubes 2 tablespoons butter 1 cup chopped celery 1/2 cup chopped onion 1/4 cup minced fresh parsley 2 eggs 18 slices soft bread, torn into small pieces, including crusts 1 cup (2 sticks) butter 1/4 teaspoon hot pepper sauce 1 cup milk 1/4 teaspoon dried thyme; or 1 teaspoon minced fresh 1 teaspoon rubbed sage 1/2 teaspoon salt 1/4 teaspoon black pepper, coarsely ground
