Cabbage Rolls
1 lb. lean ground beef 3 slices bacon, minced 1/4 cup raw long grained rice 1 egg, beaten 1 onion, grated 1 carrot, peeled, grated 1 tsp. salt
Mix together. Bring a large pot of water to a boil, and immerse in it a large head of cabbage...as the leaves soften, peel them off and remove, until you get 12. Trim down the centre vein so that it is easier to roll them. Place 1/12 of the meat mixture in the centre of each of the cabbage leaves and roll up like an envelope, tucking in sides. Place, folded side down, in a baking dish. Mix together:
1/2 cup brown sugar, packed 1/4 cup lemon juice 1 cup tomatoe sauce
Pour this over the cabbage rolls and cover tightly. Bake in 375*F oven for one hour. Uncover and bake 20 minutes longer, til cabbage is tender. I sometimes shredd some of the remaining cabbage and lay it underneath the cabbage rolls before I bake them. The sauce is delicious!
