Miniature Cheese Cakes
2 packages (8 oz. each) cream cheese 3/4 cup sugar 2 eggs 1 Tablespoon lemon juice 1 teaspoon vanilla extract 1 can cherry pie filling Vanilla wafers (chocolate wafers can be used if you prefer)
Mix together with electric mixer the cream cheese, sugar, eggs, lemon juice, and vanilla extract. Put paper or aluminum baking cups in muffin tins and place one vanilla wafer on the bottom of each cup. Fill with cream cheese mixture about 2/3 full. Top each with a spoonful of cherry pie filling. Bake at 375-degrees for 15-20 minutes. Cool. Refrigerate. Makes about 18 miniature cheese cakes.
