Ingredients 1/3 cup butter,softened 1/3 cup brown sugar 1 cup flour 1/2 cup finely chopped walnuts (optional) 1/4 cup sugar 1 8 ounce package cream cheese,softened 1 egg 1/2 teaspoons vanilla extract 2 Tablespoons milk 1 Tablespoon lemon juice
Directions Beat butter and brown sugar until creamy. With a fork, blend in flour until mixture resembles fine crumbs. Stir in walnuts. Reserve 1 cup crumb mixture for topping; press remainder firmly and evenly over bottom of a greased 8 inch square pan.
Bake in oven at 350* for 12 to 15 mins. or until lightly browned.
Meanwhile, beat sugar and cream cheese until fluffy. Add egg,vanilla,milk,and lemon juice, beat until smooth. Pour cream cheese mixture over baked crust, sprinkle with remaining crumb mixture.
Return to oven and bake for about 20 mins or until top is lightly browned. Let cool in pan on a rack, then cut into 2 inch squares. Store covered in refrigerator.
