CHEESECAKE PIE
Ingredients : 16 oz. cream cheese 2 eggs 3/4 c. sugar 1-2 tsp. almond extract
Topping: 1 c. sour cream 3-4 tbsp. sugar (to your tastes) 1 tsp. vanilla
I ended up adding: 1 can of cherry pie filling
Directions: Pre-heat oven to 350 degrees. Beat cheese in mixer until light and creamy. Add eggs, one at a time, beating well after each addition. Add sugar and almond extract. Beat until smooth, thick and lemon colored. Pour into buttered 9 inch pie plate. Bake 25-35 minutes, or until set. (Check by inserting a knife off center, which should come out clean.) Cool on rack for 20 minutes. Meanwhile, beat together sour cream, 3-4 tablespoons sugar and vanilla. Spoon over top of cake. Bake 10 minutes. Cool before serving. Makes its own crust.
*NOTE: I ended up adding a can of cherry pie filling to my finished cheesecake. I tried my recipe tonight with splenda, and it just wasn't sweet enough. Regular sugar might be, so determine if your finished product could benefit by a topping of pie filling.
