This is my grandmother's recipe for Lemon Lush. She would make this every holiday for us. I remember her making this back in 1967. This was always our family favorite desert at Grandma's She gave this to me during Thanksgiving of 2000.
Fay Wilkinson's from Canton Il. Lemon Lush
Crust: 1 stick oleo (butter or margarine) 1 cup flour 1 cup of nuts, crushed (pecan or walnuts work well)
Pack in a 9x12 baking pan. Bake for 12 minutes at 350 degrees. Cool.
1 8 ounce package cream cheese 1 cup powdered sugar (confectioners sugar or Icing sugar) 1 8 ounce container of frozen whipped topping, thawed Mix all of the ingredients for the cheese layer together. Spoon on top of crust.
2 packages ( 4 servings each)of lemon pudding cooked according to package directions
Note: You may use instant lemon pudding in place of cooked pudding (works great too). If using instant pudding, mix with beaters on low speed for 2 minutes.
Spread pudding of your choice on top of cheese mixture.
For the top: 2 8 ounce containers of frozen whipped topping, thawed Spread on top of lemon pudding.
Chill for at least 1 hour before serving. ;D ;D ;D ;D ;D ;D
