Pumpkin Cheesecake (from L.A. Times)
1 (16-oz.) small curd cottage cheese 4 eggs 3 (8-oz.) pkgs. cream cheese, softened 1 Cup sugar 2 Tablespoons flour 1 teaspoon grated orange peel 1 1/2 teaspoons pumpkin pie spice dash of salt 1 (1-pound) can pumpkin (I use fresh) Graham Cracker -Nut Crust 2 Cups sour cream 1/4 Cup orange marmalade sliced orange peel for garnish, optional
Combine cottage cheese and eggs in blender container. Blend on high speed until smooth. Set aside. In mixing bowl, beat cream cheese with sugar, flour, grated orange peel, pumpkin spice and salt until creamy. Beat in cottage cheese mixture until smooth. Fold in pumpkin. Pour into baked Graham Cracker-Nut Crust. Bake at 300 degrees 1 1/2 hours.
Graham Cracker-Nut Crust
1 1/2 Cups graham cracker crumbs 1/2 Cup finely chopped pecans or walnuts 3 Tablespoons sugar, (optional) 1/4 teaspoon pumpkin pie spice 6 Tablespoons butter or margarine, melted
Mix, then stir in butter. Press on bottom and 1 1/2 inches up sides of 10-ince springform pan. Bake at 350 degrees for 10 minutes. Cool.
