Gluten Free - Fruit Muffins
1 cup buckwheat flour 2 Tbsp brown sugar 1 tsp mixed spice 1 egg 1 tsp baking soda 1 1/2 cups milk 1 cup rice flour 3/4 cup mixed fruit 2 tsp cream of tartar
Into a bowl mix flours, sugar, spice, c of t & b/soda. Mix milk & egg & add fruit, add dry ingredients and mix until just combined. 3/4 fill greased muffin pans & bake 350oF for 10-15 mins.
