Fresh Apple Muffins-Diabetic
2 Tablespoon soft margarine 2 Tablespoon sugar replacement 1 egg (beaten) 1 1/4 cup flour 1/4 teaspoon salt 2 teaspoon baking powder 6 Tablespoon skim milk 1 apple (peeled and chopped) Note: I like to add two Apples
Cream margarine and sugar replacement; add egg. Stir in remaining ingredients. Spoon into greased muffin tins, filling no more than two-thirds full. Bake at 400F for 25 minutes, or until done. For those who like spices, you may add cinnamon, nutmeg, ginger, cloves to the mix - just a dash of each. Makes: 12 muffins 1 muffin = 1 bread calories = 72
