Fajita Pitas
This recipe is very low in fat
3-4 chicken breasts; remove skin, de-bone and slice in small strips 1 green bell pepper; sliced in small strips 1 onion; sliced or chopped 1 packet fajita seasoning mix 1/3 cup water Pita Breads
No fat cheese, no fat sour cream, salsa, etc. as desired.
Spray frying pan with cooking spray and add chicken breast strips, bell pepper strips, and onion to pan. Cook until chicken is done and veggies are tender-crisp. Add fajita seasoning mix and water to meat and veggie mix; stir together. Cut open pitas and open so that they make a "pouch" -- fill pouch with some of the chicken/veggies and top as desired. Serves 4-5.
