Spicy Potato Salad (LF)
2 lb red potatoes 1/4 cup diced red onion 1/4 cup diced white onion 1 rib celery, sliced 1/2 cup diced bell pepper 1/2 cup nonfat mayonnaise 1/3 cup nonfat sour cream 2 tbsp Dijon mustard 2 tbsp minced fresh dill ground red pepper (to taste) 1 tbsp cider vinegar freshly ground black pepper
Boil the potatoes until tender. Set aside. When cool enough to handle, cut into 1-inch cubes. In a large bowl, combine potatoes with remaining ingredients (adding red pepper according to individual taste in hotness), toss gently and chill. Serves 8 -3/4 cup each.
