Easy Lowfat Quiche
Pie crust (whatever kind you like, I like the Pillsbury refrigerated) 4 Eggs, 5 egg whites, or egg substitute (equivalent of 4 eggs) 1 cup milk (lowfat, nonfat or skim) 1 tsp. dry mustard 1/2 - 1 cup grated cheese ( I use regular because it melts better, you can use lowfat, I personally don't like non-fat.) Type of cheese depends on your other ingredients.
*Other ingredients. Some I've tried are Broccoli & Hamburger, Spinach & Hamburger, Ham & Spinach, Crab & Spinach, mixed vegetables.
Mix wet ingredients (and any herbs & spices you want to add). Layer dry ingredients in pie shell, ending with cheese on top. Pour wet mixture over dry in pie shell. Bake at 400 degrees for about 50 min. This makes great lunches for a couple of days--one slice on a plate in the microwave!
