Low Carb Zucchini and Eggs
4 eggs, beaten 2 tablespoons butter 2 cups zucchini, sliced very thin or chopped salt and pepper to taste
In a large frying pan, melt butter and saute zucchini until soft and tender. Add beaten eggs immediately and cook with zucchini like scrambled eggs. Salt and pepper to your own taste. Serve hot.
NOTE: This is the type of recipe where you can 'add' what you like and stay low carb. I always like onions in mine, so saute them with the zucchine. Sometimes I feel like adding sausage, and use the microwave Jimmy Dean sausage links. Heat, blot off grease well, and chop up to go in the egg mixture.
