LIGHT BROCCOLI SOUP 1 bunch broccoli 1 small onion, chopped 2 cups potatoes, peeled and diced 1½ cup chicken broth stock or water ½ tsp. dried thyme ¼ tsp. pepper 1½ cup milk Salt (to taste) 1 clove garlic (or garlic powder) Separate broccoli into florets, chop coarsely. In a saucepan, combine stems and florets, onion, potatoes, garlic, chicken stock, thyme, and salt and pepper. Bring to a boil. Reduce heat, cover and simmer for 10 minutes or until potatoes are tender. In a blender, puree soup in batches, if necessary, until smooth. Return to saucepan, and add the milk. Heat through without boiling.
Makes about 5 cups.
