Why go to so much trouble...Just use the Jello brand of Instant Sugar Free pudding.....It is cheap easy and tastes excellent...My husb is a diabetic and he's been eating this for years and I don't think he realizes it yet...laughing...He's always quick to compliment my cooking but is very resistant to "diet/ diabetic recipes".
