***Healthy Recipe for Baked Flounder***
2 lbs. Fresh flounder filets, 3 large ripe tomatoes 4 ozs. low-fat feta cheese 1 cup black olives 3 cups green beans 3 chopped sweet apples 1 tsp. honey 2 cups lemon juice 2 Tbs. Olive Oil pepper, parsley & oregano to taste
Using a medium sized deep baking pan, bake fish at 350° in 1 cup lemon juice for approximately 25 minutes or until tender/cooked.
Simultaneously, place olive oil, sliced tomatoes, chopped apples, green beans, 1 cup of lemon juice, parsley, oregano, pepper in a skillet over a medium flame. Stir until tomatoes become soft.
Remove fish and place thin slices of cheese over the filets. Pour sliced olives over fish and then pour warm skillet mixture onto the top of the fish as well. Bake for another 5 minutes.
