French Market Soup makes 8 servings
2 cloves Garlic, peeled and minced 2 Tbs. Butter 3 Scallion, sliced 1 each Orange and Yellow Bell Peppers, seeded and chopped 2 Stalks Celery, sliced 1 tsp. each Ground Coriander and dried Thyme 1/4 tsp. each Salt and Red Pepper Flakes 2 cans (14 ½ oz. each) Beef broth 2 cans (14 ½ oz. each) Diced Tomatoes 4 cup's coarsely chopped Watercress
In sauce pot over medium heat, cook garlic in butter for 1 minute. Add next ingredients and cook for 5 minutes more; stirring ocasionally. Add broth and diced tomatoes; bring mixture to boil. Reduce heat to low simmer 15 minutes., or until vegtables are tender. Stir in watercress and cook for 5 minute more, or until greens are wilted
