serves 4-6 1/2 lb. egg noodles, cooked for just a few minutes 4 Tbsp. butter 1 small onion, finely chopped 3 large eggs, beaten 1 1/2 cups sour cream (can use light) 1 Tbsp. chopped parsley (I use dried) 1/2 cup grated Cheddar cheese ( I use sharp) 1 1/2 cups cooked ham, chopped salt & pepper to taste pinch cayenne pepper Spray crockpot with pam. Melt butter & onions in skillet & saute until soft (or cook in microwave for about 2 minutes) In small bowl, mix eggs, sour cream & parsley. Add onion, cheese and ham. add salt, pepper and cayenne to taste. Cook on low 3-4 hrs. or until set. This can also be baked in oven at 350 degrees for 45 min. to 1 hr.
