Diet Ambrosia Servings 8 1 c. Fat free milk or skim 1 pkg. sugar-free vanilla instant pudding, 4-serving size 2/3 c. low-fat plain yogurt 1/3 c. orange juice, frozen concentrate, thawed 1 & ½ c. un-peeled diced red apples 1 & ½ c. un-peeled diced green apples 1 c. sliced ripe bananas 20 oz. unsweetened pineapple chunks, drained 16 oz. sliced peaches, drained canned in juice 11 oz. mandarin oranges in light syrup -- drained 1/4 c. shredded coconut 1. In medium bowl, add milk and pudding mix; stir with wire whisk about 2 minutes, until thickened. Add yogurt and orange juice; stir well. 2. In large bowl, combine apples, bananas, pineapple, peaches and oranges. Add pudding mixture, gently stirring to coat fruit. Chill 1 hour before serving. Sprinkle with shredded coconut. Per serving: About 219 cal, 3 g pro, 52 g car, 1 g fat, 4% cal from fat, 2 mg chol, 213 mg sod, 3 g fiber.
