INGREDIENTS: 1 tablespoon blue cheese 2 tablespoons light cream cheese 1 tablespoon sherry 1 large onion 1 chopped tomato 2 cups of uncooked pasta 2 teaspoons parsley 2 tablespoons oregano 2 tablespoons basil 1/2 teaspoon salt 1/2 teaspoon pepper
DIRECTIONS:
Preheat oven to 350 degrees. Roast onion in oven for half an hour or until tender. Allow onion to cool. Peel and quarter onion. In blender, mix onion, blue cheese, cream cheese and sherry until smooth. Cook pasta (gnocchi works well) in salted boiling water until done. Drain and toss with tomatoes, herbs, salt and pepper. Stir in sauce and serve. Yields 2 servings Calories: 336 per serving, fat 8 grams, fiber 5.3 grams
