No Crust Strawberry Pie (Low Fat too!)
24 oz fresh strawberries 1 pkg sugar-free cook & serve vanilla pudding mix (2.1 oz) 1 pkg sugar-free strawberry flavored gelatin (.6 oz) 2 c water
Rinse and hull strawberries. Distribute evenly in a 10 inch pie pan. In a medium saucepan combine pudding mix, gelatin mix, and water. Stir well and bring to a full boil. Pour mixture over strawberries and refrigerate for 4 to 6 hours. Top with light frozen whipped topping prior to serving, if desired. Makes 8 servings.
Nutritional information: 58 calories, trace fat, 2 g protein, 13 g carbohydrates, no cholesterol, 187 mg sodium, 2 g fiber.
