Lite & Creamy Dietetic Cheesecake 1 graham cracker crust - in an 8" or 9" deep dish pie pan, packaged or homemade 1 egg yolk 1/2 cup skim milk 1 envelope unflavored gelatin 1 T. artificial sweetener (equal preferred) 1 1/2 cups small curd cottage cheese 1 T. lemon juice 1 tsp vanilla 1 cup lite whipped topping (such as cool whip lite) Preparation - In a blender or food processor, process cottage cheese until very smooth. Set aside. In microwave safe bowl or double boiler, combine egg yolk with milk. Add gelatin. Cook until gelatin is dissolved and mixture is thick. Remove from heat and add sugar substitute. Cool completely, then add cottage cheese, lemon juice and vanilla. Chill, stirring ocasionally about 1 1/2 hours. Fold whipped topping into chilled lemon mixture. Pour into graham cracker crust, then chill about 1/2 hour before serving. Jay
