This was given to me by my OBGYN's wife in W. Germany maaaaaany years ago! It has been my husband's favorite since I first made it for him.
Veal Cutlet Dinner
4 veal cutlets (I use cube or minute steaks, too) 2 tbl. flour 2 tbl. shortening or oil 1/3 c. grated parmesan cheese 1/4 tsp. pepper 4 med. potatoes, sliced thin 2 med. onions, sliced thin 3 beef bouillon cubes 3/4 c. hot water 1 tbl. lemon juice
Coat cutlets in flour, unless you are using the breaded ones). In a large skillet brown meat slowly on both sides. Combine cheese and pepper. Sprinkle some cheese mixture over meat. Cover with potato slices and sprinkle cheese mixture over them. Cover with onion slices and sprinkle cheese mixture over all. Dissolve bouillon in hot water and add lemon juice. Pour over mounded meat patties. Cover and simmer at 350 degrees about 40 minutes or until meat and vegetables are done. Serves 4.
