Diabetic Chicken Maryland all-purpose flour 3/4 cup --- salt 1 tsp --- pepper 1 pinch --- paprika 1 tsp --- (3 lb) chicken, cut in pieces, skin removed 2 ea --- Nonfat cooking spray 2 spray --- low-fat, low-sodium chicken broth 2 cups --- vegetables of choice 4 cups ---
Place flour, salt, pepper, and paprika in a zippered plastic bag. Add chicken pieces and shake to coat. Spray a large nonstick skillet with cooking spray. Add chicken pieces and brown over medium heat on all sides. Add broth, bring to a boil, reduce heat to simmer, cover, and cook 30 minutes. Add vegetables, cover, and cook unti vegetables are tender.
