Diabetic Vegetable Bake frozen mixed vegetables, thawed 1 1/2 cups --- flour 2 Tbsp --- low-calorie margarine 1 Tbsp --- fat-free milk 1/4 cup --- Parmesan cheese 1 Tbsp --- hot mashed potatoes (instant or leftover) 1 cup --- paprika 1 dash ---
Heat oven to 350 degrees F. Mix vegetable and flour in a small nonstick casserole dish ( or spray glass dish with nonstick cooking spray). Melt margarine in a small saucepan and add milk and cheese. Pour hot liquid over vegetables. Top with mashed potatoes, spreading evenly. Sprinkle with paprika. Bake 25-30 minutes or until potatoes slightly brown.
