Low Carb Stuffed Peppers
6 Green Bell Peppers 1 1/4 lb Ground Beef 1 Onion,Chopped 2 c Tomatoes,Chopped And Drained 1 ea Garlic,Minced 1 t Basil 3 oz Swiss Cheese,Shredded
Cut the top from the peppers. Scrape out the seeds. Cook the meat, onion and garlic in a large skillet until meat is done. Stir in tomatoes and basil. Cook the peppers in boiling water just until they begins to soften. Drain and place in baking pan. Divide the filling between the peppers. Sprinkle cheese over top. Bake at 375 until peppers are soft and cheese melted, about 15 mins.
