1 pkg frozen chopped spinach, thawed & squeezed dry (10 oz) 1 1/2 c fat free sour cream 1 c fat free mayonnaise spice blend to taste (Mrs. Dash, Vegit, Lemon Pepper) 1 c chopped fresh mushrooms 3 green onions, chopped
In a medium-sized bowl, combine all ingredients. Mix well and refrigerate. Serve chilled with a variety of raw vegetables, such as bell pepper strips, zucchini coins, cauliflower and broccoli florets, carrot, celery and jicama sticks. Makes 3 cups (1/4-cup servings).
Nutritional information: 45 calories, 1g fat, 2 g protein, 7 g carbohydrates, no cholesterol, 146 mg sodium, 1 g fiber.
